A thin leg steak cut from the topside or top rump and then tenderised. Ideal for a sandwich steak or a light meal or sliced in strips for stir-fry or stroganoff.

Pan fry or grill quickly on a high heat, less than a minute each side and then rest for a couple of minutes.
