Skirt is from the thin flank or belly section of the carcase, it's a thin sheet of muscle, sometimes after all the inedible bits have been removed it's only worth mincing - which commercially is often what happens to this cut. But there are usually a couple of good pieces per side. A well marbled muscle its tasty in pies, was the meat traditionally used in Cornish pasties and can be fried - but should be eaten blue/rare or it will be tough. We usually sell it in broad strips but if you'd like a flat piece select that option.

As a result, we cannot guarantee the meat you receive will look exactly like the photograph, and sometimes it’s not possible to achieve the higher weights, particularly of steaks. You will only be charged for the weight of meat supplied.
