Skirt is from the thin flank or belly section of the carcase, it's a thin sheet of muscle, sometimes after all the inedible bits have been removed it's only worth mincing - which commercially is often what happens to this cut. But there are usually a couple of good pieces per side. A well marbled muscle its tasty in pies, was the meat traditionally used in Cornish pasties and can be fried - but should be eaten blue/rare or it will be tough. We usually sell it in broad strips but if you'd like a flat piece select that option.
