We usually sell brisket boned and rolled for slow cooking or pot roasting. But if you'd like it as a flat piece for roasting or the barbecue just let us know. It's from the fattier parts of the forequarter, we remove the inedible bits and often roll in some lean meat to achieve a cylindrical joint to make cooking it easier.
